Hush Puppy Puffs

3/4 cup cornmeal self rising
3/4 cup flour self rising
1 tablespoons sugar
1 teaspoons Salt -- kosher
1 teaspoons Baking Soda
3/4 cup Buttermilk
1 Egg -- slightly beaten
1 medium onion -- finely chopped

Instructions
Slightly beat egg and add buttermilk and onion and stir to mix. Add
to combined dry ingredients.

Carefully drop batter by tablespoonfuls into deep hot oil; cook only a
few at a time, turning once. Fry until hush puppies are golden brown
(3 to 5 minutes).

Drain well on absorbent towels.

Yield: about 2 dozen
 
I add chopped Jalapeno's to mine... love it..
