Pecan Pie Muffins



1 cup packed light brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup softened butter or margarine
2 eggs, beaten
(Can use any size muffin tin for this.  Recipe makes 5 giant muffins, 8 regular muffins, or 12 mini muffins.  Grease tins with Pam® or Baker's Joy®.)

      Heat oven to 350ºF (175ºC).  In a medium bowl, stir brown sugar, flour and pecans.  In a separate bowl, beat softened butter and eggs until smooth.  Stir into dry ingredients just until combined.  Spoon batter into prepared muffin tins, about 2/3 full.  Bake in regular muffin tins 19 minutes for perfect.  Depends on your oven.  (Adjust baking time for other sizes or elevations.)
These muffins are definitely best served warm, preferably straight from oven with a pat of butter!
