Texas Tavern Burgers

 
 

1 1/2 cups chopped onion


3 tablespoons butter


1 can tomato soup


1/2 cup water


1/4 cup vinegar


2 tablespoons prepared mustard


2 tablespoons Worcestershire sauce

2 tablespoons brown sugar


2 pounds ground beef


salt and pepper to taste


Combine and cook 1 cup onion and butter until clear and tender. Remove from fire and add remaining ingredients except beef, salt and pepper. Simmer for 10 minutes.
Cook ground beef and remaining onion until brown. Add to mixture. Salt and pepper to season. Spread on toasted buns

Tamale Pie

 
 
 


1 1/2 lbs. ground beef


1 jar picante salsa


1 can green chilies


2 c. mild cheddar cheese, grated


2 pkgs.  cornbread mix


1 can refried beans


1 can whole kernel corn (drained)


In a bowl, prepare cornbread mix as package directs adding 1/2 can corn, set aside. In a skillet brown ground beef, drain. In a large bowl combine beef, salsa, chilies, remaining corn and 1 cup cheese. Spread refried beans in the bottom of a well greased 13 x 9 x 2in glass pan. Top with meat mixture and remaining cheese. Top with cornbread mix. Bake at 350* for 20-25 minutes or until heated through and cornbread topping is well cooked. Yield:

Clam Chowder

Lot's of the recipes I send are mine, my friends and my families, but once in awhile I come across a good recipe that just sounds plain good , that is this one,, Thanks Jean !!
 
 
     1 qt Steamed softshell clams
 
             1 ea Onion

      3 ea Medium potatoes, diced 
 
             2 T  Chopped parsley

    1/4 lb Butter
 
      2 c  Milk

      1 x  Salt/pepper to taste         
 
  Melt butter, add onion and cook until tender but not brown. add potatoes
  and just enough water to cook potatoes. When potatoes are tender add
  parsley, salt and pepper, and clams with their juice. Just before serving
  add 2 cups milk and heat but do NOT boil.

Mexicana ~ Tater Tots

These are amazing!  There are several versions but I like this one best..
 
 
4 cup frozen Tater Tots

1 (16 ounce) can stewed tomatoes

1/4 teaspoon Mexican oregano, crumbled

1 cup sour cream

2 tablespoons milk

1 tablespoon chopped canned green chiles

1/2 teaspoon salt

1/2 cup grated Cheddar cheese


Heat oven to 375 degrees F. Put frozen Tater Tots into a 1 1/2-quart shallow baking dish. Mix with tomatoes and oregano. In a small bowl, stir sour cream, milk, chiles and salt together. Spoon over top. Sprinkle with cheese. Bake 25 minutes.
