This recipe was given to me in the early 1980's, Very Good!!!
1 lb. sausage, hamburger, or leftover meat in gravy
2 cups tomatoes
2 cups tomatoes
1 tsp. chili powder
1 onion, chopped
1 garlic clove, minced
Salt and pepper to taste
Cook all the above ingredients together for 15
minutes. Set aside. Peel and slice
2 or 3 eggplants, brown in small amount of oil.
Place in 9"x12" baking dish in
layers (eggplant, then meat mixture, ending with
meat mixture on top). Sprinkle
with cheddar cheese and top with crushed saltine
crackers. Bake till cheese melts
and crackers brown (about 20-30 minutes).
