Southern Fried Cornbread

This was a staple of the Old South!
 
Enough hot oil to be at least 3 inches deep

1 cup white selfrising corn meal

1 tsp. baking powder

1 cup boilling water

    When oil is nearly hot enough to fry cornbread in, add boilling water to meal along with baking powder. Wet your left hand with cool water. Scoop up a heaping tablespoon of hot meal mixture; using wet hand form the top into a smooth oval.
     Ease off the spoon into the oil. Repeat until you have about four or five inthe oil. Brown on both sides. Remove to a platter lined with paper towels.
     Repeat until all are cooked. This is great with Stews, Chili and soups.

OLD FASHIONED TEA CAKES

 
 

1 cup white granulated sugar
1 cup powered sugar
2 sticks butter, softened
1 cup veg.oil
2 eggs , beaten
2 tsp. vanilla
4 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. cream of tartar

Preheat oven to 350°F.

With mixer, cream together: sugars, butter and oil. Add beaten eggs and vanilla. Mix. Add dry ingredients and mix well. Mixture should be thick. Drop by tesp. onto cookie sheet.

Bake for 12-15 min. Do not overbake.

 sprinkle with powdered sugar soon as they come out of the oven.

Diane's One Dish Meal

 
 
 
2 box Mac and Cheese
1  can Ro-Tel Tomatoes
1 to 1 1/2 cup  Sauted Ham or Chicken , cut into small pieces (cubed)
 
Cook Mac and Cheese According to directions on box. Add
Ro-tel  Tomatoes and Meat. Stir all together to blend..
Pour into a buttered casserole and Bake at 350* oven for about 29 minutes..
 
MAy top with grated  Mild Cheddar the last 5 minutes of baking..
 
So So Good..
 
Serve with a salad :)
 
*NOTE*
 
I use boneless chicking breast Or leftover Ham thats been baked , great way to use leftovers..

MomEs Frito Pie

 
My bunch loved this stuff..
 
 
Put Frito's on a soup bowl.
Pour in Chile, canned or home-made. Heated
Top with diced Onions.
Now add Grated Cheddar Cheese on top ..
 
Awwww  talk about good !!!
 
Course I like a Japapeno Pepper with mine :)
