Sweet Potato Surprise

 
3 medium sweet potatoes
1/2 cup brown sugar, firmly packed
1/4 cup each raisins, marshmallows
1 cup orange juice
3 tbsp. walnuts, chopped
2 tbsp. butter or margarine, melted
1/4 tsp. salt
1 tbsp. cornstarch

      Heat oven to 350ºF (175ºC). 
 Boil sweet potatoes.  Run cold water over potatoes;
 let them air-dry to cool.  Once cooled, peel them.
  Cut potatoes into 2" pieces. 
 In 9" baking dish arrange potatoes to your liking. 
 Combine raisins, cornstarch and orange juice. 
 Cook over medium heat.  Stir constantly. 
 Add salt and butter to saucepan. 
Mixture will become thick and then it is done. 
 Pour over potatoes.  Sprinkle with marshmallows,
 chopped nuts.  Bake 20 minutes.  Makes 6-8 servings.
