ANZAC Biscuits

1 cup all-purpose flour
1 cup rolled oats
3/4 cup desiccated coconut
3/4 cup granulated sugar
4 1/2 ounces butter
1 tablespoon golden syrup (corn syrup)
1 1/2 teaspoons baking soda
2 tablespoons boiling water

Heat oven to 300 degrees F. Brush 2 cookie sheets with melted butter or oil.

Place flour, oats, coconut and sugar in a large mixing bowl, and stir until combined.

Combine butter and golden syrup in small pan; stir over high heat until melted.

Mix baking soda with boiling water; add to melted butter and syrup. Add to flour mixture and stir until combined. Shape level tablespoons of mixture into balls and flatten slightly. Place onto prepared cookie sheets about 2 inches apart. Bake 15 to 20 minutes or until crisp and golden.

Remove from oven; let stand 2 minutes before loosening the biscuits and moving them to a wire rack to cool.

Makes about 2 dozen cookies.

Crispy Oven-Baked Onion Rings:

 

4 cups baked potato chips
1/2 tsp cayenne
1 cup lowfat buttermilk
1/2 cup plus 2 tbsp all-purpose flour
1/2 tsp salt
1/4 tsp fresh ground black pepper
1 to 2 large Vidalia onions, peeled

Preheat the oven to 450 degrees F. Spray a baking sheet slightly with oil and set aside.

Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside.

In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside.

Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.

Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat.

Dip onions one at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet.

Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately. Makes four servings.

Custard Pie

6 eggs
1 c sugar
nutmeg
4 c milk
2 tsp vanilla extract

Beat the eggs with sugar Add milk and vanilla.
Pour into pie shell.
 Sprinkle top with nutmeg.
Bake at 425 degrees for 10 mins. Lower heat to 350 degrees and cook until knife inserted in the middle comes out clean ( usually 1/2 hr).
*Note You can also use the same recipe to just make it a custard instead
of using pie shell just pour it into custard dishes. Bake at 400 degrees
with dishes set in a pan of water for 25 to 30 mins.

S NOTE

 
Today is the first day in 5 weeks that the pain is bearable in my knee and hip.
 
I went to my doctor last Thursday, She added some med's and took some away, also added a Ibuprofen Cream, She wants to see me again in 4 week. I really think the cream is helping. But whatever it is I hope it keeps getting better..
 
I am not going to over do it, so I am going to send 2 recipe then get back to the bed..
