Meatloaf With Gravy

Prep Time: 10 minutes
 
Cook Time: 1 hour
 
Total Time: 1 hour, 10 minutes
 
Ingredients:
 
2 pounds 85% lean ground beef
3/4 teaspoon salt or seasoned salt blend
1/4 teaspoon ground black pepper
2 eggs, lightly beaten
1/2 cup soft bread crumbs ***
1/3 cup milk
1 teaspoon Worcestershire sauce
1/4 cup finely chopped onion
1/4 teaspoon dried leaf thyme, crumbled
1 jar (12 ounces) prepared brown gravy or an envelope of dry gravy mix Preparation:
 
Mix ground beef, salt, pepper, eggs, bread crumbs, milk, Worcestershire, onion, thyme, and rosemary. Pack into a lightly greased or foil-lined loaf pan or shape into a loaf and place on a lightly greased foil-lined baking sheet with sides, such as a jelly roll pan. Bake at 350° for 1 hour and 10 minutes. While the meatloaf is baking, prepare or heat purchased gravy. I just make brown gravy..yummm
 
*** Quick Tip: Make bread crumbs in the food processor with your day-old bread and keep in a food storage bag in the freezer. They're always available for meatloaf, casserole topping, or other uses.
 

Chicken Spaghetti

4 boneless chicken breast halves, cooked and chopped
1 can cream of mushroom soup
1 can chicken broth
1 can Rotel tomatoes with green chilies
1 small jar pimientos
1 pound Velveeta cheese, cubed or shredded
12 ounce package linguine noodles salt and pepper to taste Preparation:
 
Cook the linguine following package directions; drain in a colander and rinse with hot water. In a bowl, combine the soup, broth, tomatoes, pimientos.
 
Layer in a baking dish: linguine, chopped chicken, soup mixture. Cover with the cheese and bake at 350° until cheese is melted. Stir mixture before serving and add salt and pepper to taste. Shared by Melissa Presley.
 

A baked chicken and Yellow Rice

Cook Time: 1 hour, 30 minutes
 
Total Time: 1 hour, 30 minutes
 
Ingredients:
 
2 frying chickens, cut up
2 1/2 cups long-grain rice
1 green bell pepper, sliced
1 med onion, chopped
1 teaspoon saffron
1 jar (2 oz) pimiento, chopped
2 tablespoons olive oil
1 clove garlic, minced
1 package green peas, frozen, 10 ounces
5 cups water
2 teaspoons salt Preparation:
 
Saute green pepper and onion in olive oil until tender. Put in a large roasting pan; add all ingredients except chicken and mix together thoroughly. Sprinkle chicken pieces with salt and place on top of the rice mixture, skin side up. Cover and cook at 400 degrees for 1 1/2 hours. Remove cover and cook an additional 5 minutes. Serves 8.
 

jambalaya

2 tablespoon oil
1 pound of boneless chicken breast , cut into small cubes
1/2 cup onion chopped
1/2 cup chopped green pepper
2 garlic cloves, minced
1/2 cup chili sauce
1/4 cup water
1 (14 1/2 oz) can tomatoes, chopped with juice
8 ounces polish sausage, cut into 1/2 inch pieces
1/2 teaspoon dried leaf thyme, crumbled pepper to taste dash cayenne pepper Preparation:
 
Heat oil; sauté chicken and sausage for 5 minutes, then add onion, green pepper and garlic. Sauté for a few minutes longer, then add remaining ingredients. Cover and simmer about 30 minutes. Serve over cooked rice. Jambalaya recipe serves 6.
