Homemade Marshmallow

 
This recipe sounds fun and delicious.. With the holidays upon us, this might fit in perfectly :)
 
Sometimes it's a lot of fun to make something that's now mostly purchased in stores. Homemade marshmallows not only taste delicious, but you can make them in any flavor you choose. You can even add nuts or dried fruit to make them even more chewy and delicious. Try an old-time treat from great-grandma's day.

This old-fashioned marshmallow recipe is taken from "The Canadian Farm Cookbook," circa 1912.


Homemade Marshmallows

2 rounded tablespoons gelatine
2 cups granulated sugar
Pinch of salt
Flavoring to taste
Powdered sugar as required

Soak the gelatine in 8 tablespoons cold water. Heat the sugar with 1/2 cup water until dissolved. Add gelatine to syrup and just bring it to a boil, take off the stove and let stand in a bowl until partially cool. Add salt and flavoring, beat with a whip until soft, then with a large spoon until only soft enough to settle into a sheet.

Dust pans thickly with finely powdered sugar, pour in the candy mixture about 1/2 inch deep, and set to cool until it will not come off the finger. Turn out on powdered paper, cut in cubes and roll in powdered sugar.

Nuts, chocolate, or candied fruit may be beaten in, or the marshmallows may be rolled in grated coconut before being powdered.

Tomato Salad

 
So Good !!!
 
3 large tomatoes, seeded and finely chopped

1 medium cucumber, seeded and finely chopped
 
1/2 large sweet onion, finely chopped

1 cup loosely packed fresh basil, minced

1/4 cup apple cider vinegar

1 clove garlic, minced

1/4 tsp. salt

1/4 tsp. pepper

Mix Well....

Mock Pecan Pie

 
 
¼ c. butter & oleo
½ c. white sugar

1 c. dark Karo syrup
¼ tsp. salt

3 eggs

1 c. Rice Krispies

Bake in a 350 degree oven for 50 minutes.

Sometimes I sprinkle a few pecans on top , but you surely don't have too.

IMPOSSIBLE COCONUT PIE ( Makes it's own crust )

My mama made these pies often, so easy and delicious !!!
 
2 eggs, beaten

1 C. milk

1/4 t. baking powder
1 C. flaked coconut

1 C. sugar

1/4 C. flour

1/2 stick oleo, melted

1/2 t. vanilla

 

Beat eggs, add sugar, flour and baking powder together.
Add milk and mix well. Pour into 8" greased pie plate.
Bake 30 minutes at 350.
Needs no crust it makes it's own.

Hot Chocolate Mix

 
 
2 lb. dry milk
2 lb. Powdered Sugar
2 lb. Nestle Quick
8 oz. Coffee Creamer

Mix all together and store in a tight container .
Use 1/3 cup mix for 1 cup of hot chocolate
( may mix with milk or water)

Cornbread Dressing


 

This is a traditional cornbread-dressing recipe My Mom And Grandma

Used !!!  It is still my favorite dressing...

.  Very easy to follow, and very good.

1/2 Cup Bell Pepper

1/2 Cup Onion, chopped

1/2 tsp. Celery

2 Tbsp. Butter

6 Cups Cornbread, crumbled

4 Cups White Bread, crumbled

1 tsp. Poultry Seasoning

1 tsp. Salt

1 tsp. Sage

1/2 tsp. Pepper

2 to 2 1/2 cups Chicken or Turkey Broth

Sauté the bell pepper, onion, and celery in butter while setting up the rest

 of the ingredients.  Mix all the ingredients in a bowl, pouring on the broth

 and add cooked meat pieces that have been boiled.

Either, stuff the mixture into the turkey or place it in a greased roster pan,

 I prefer to bake the dressing seperatre from the turkey..

to bake at 350 degrees F for 45 minutes

Divine Divinity

There are 5 steps to making a good divinity, but the outcome is well worth every step  :)  I have been making this recipe for many years, creamy, tasty and rich, so a little goes a long ways.. I can't even remember who gave it to me.. But I am so glad they did !
 
 
2 1/2 cups sugar
2/3 cup light corn syrup

1/2 cup water

2 large egg whites

1 1/2 teaspoons vanilla

2/3 cup coarsely chopped pecans or walnuts or chopped red or green candied cherries (optional)

Step 1:
Line a baking sheet with waxed paper. In a large heavy saucepan, combine the sugar, corn syrup, and water. Bring to a boil over moderately high heat, stirring constantly with a wooden spoon to dissolve sugar. (Avoid splashing mixture onto side of the pan.) Boil for 3 minutes. If using a candy thermometer, carefully clip to side of pan, making sure the bulb is immersed but not touching the bottom of the pan.

Step 2:
Cook over moderate heat, without stirring, to 260° on candy thermometer, hard-ball stage (15 to 18 minutes). (Or, use this cold water test. Using a spoon, drop a small amount of hot mixture into very cold, not icy, water. Dip your fingers into the water and form the mixture into a ball. Remove the ball from the water; it should not flatten but can be deformed by pressure.)

Step 3:
Remove pan from heat; remove the thermometer from saucepan. In a large bowl, with very clean beaters and an electric mixer on medium to high, beat the egg whites until stiff peaks form. Slowly pour hot syrup mixture in a fine stream over egg whites, beating with electric mixer on high for 3 minutes and scraping the side of the bowl occasionally.

Step 4:
Add the vanilla. Continue beating with the electric mixer on high just until candy starts to lose its gloss and holds soft peaks (5 to 6 minutes), scraping the side of the bowl occasionally. Stir in nuts (if using).

Step 5:
Working quickly, drop by teaspoonfuls onto waxed paper. If the divinity becomes too stiff, beat in very hot water, a few drops at a time, until it is a softer consistency. Cool completely. To store, cover tightly.

Tips:
Choose a dry day. Because sugar absorbs moisture from the air, divinity may never set up if you try to make it on a humid day.

Start with room temperature egg whites. They heat up to a greater volume than cold egg whites.

Use a heavy-duty, freestanding electric mixer. Beating divinity puts a strain on a mixer's motor. Portable mixers and lightweight, freestanding mixers may not have heavy enough motors.

Follow the recipe directions carefully. Timing is important. Adding the hot syrup too quickly or not beating the candy mixture long enough can cause divinity to fail. Overbeating the divinity will cause it to set up before you can drop it into individual pieces.

HAPPY THANKSGIVING !

RAW APPLE CAKE

 


3 eggs
1 cup oil
2 cups sugar
3 cups flour
2 tsp vanilla extract
1 tsp baking soda
1 to 2 tsp cinnamon
1 tsp salt
3 cup thinly sliced apples
1 cup chopped nutmeats
1 cup raisins

Beat eggs, add sugar, oil, then rest of the ingredients, with the apples, nutmeats and raisins being last. Batter will be stiff. Pour into a greased and floured 8x10 pan, sprinkle top with a cinnamon sugar mixture, bake in 375 degree oven for app. 40 minutes.. baking time can vary according to apples, you will have to use your judgement ..

Orange Dream Cake

Awesome Cake !!!
 
Part 1:
1 white cake mix
3 eggs
1/3 c. vegetable oil
1 envelope orange Kool-Aid
1 c. water

Directions

Mix together ingredients in part 1, pour in a greased 13x9x2 cake pan. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near center comes out clean. Poke holes in cake with a meat fork and cool 30 minutes.

Part 2:
1 pkg. 3 oz. orange Jello
1 c. cold water
1 c. boiling water

Dissolve Jello in boiling water, add cold water and pour over cake. Cover and refrigerate for approximately 2 hours.

Part 3:
1 pkg. 3 oz. orange Jello
1 c. milk
8 oz. frozen whipped topping or Cool Whip
1 t. vanilla
1 box 3 or 4 oz. instant vanilla pudding

Combine milk, Jello, vanilla and pudding mix. Beat on low 2 minutes. Then fold in whipped topping, add to cake. Refrigerate until ready to serve.

Angel Bizkits

Everyone has thier favorite recipe for Angel Bizkits, This is mine!
 
2 pkg. active dry yeast
1/4 C. warm water
2 C. warm buttermilk
5 C. flour
1/3 C. sugar
1 T. baking powder
1 t. baking soda
1 T. salt
1 C. shortening

Dissolve yeast in warm water. Let stand 5 minutes. Stir in buttermilk; set aside. In another bowl combine all the remaining ingredients except shortening. Then blend in shortening until coarse meal. Then stir in yeast. Turn onto a floured surface and roll out to 1/2 inch. Then cut with cutter. Cover and let rise in a warm place for 1 1/2 hours. Bake at 450 for 8 - 10 minutes. Yields: 2 1/2 dz.

Ma's HALF MOON PIES

 
You can use aany friut you like!!!

2 c. dried apples
2 c. cold water
1/8 tsp. salt
2 c. sugar
1 orange, juice and grated rind
1 tbsp. cinnamon
1 recipe (double crust) pie pastry

Cook the dried apples in a saucepan with water and the salt. When apples are soft and pulpy. Add the sugar, orange and cinnamon. Simmer until water is cooked away. Roll pastry out and cut in 8 inch circles. Place generous portions of the mixture on half of the pastry rounds; fold the pastry over and pinch the edges tightly together. Bake in 450 degree oven for 10 minutes. Reduce heat to 350 degrees and bake about 35 to 40 minutes longer or until golden brown. Makes 6 half moon pies.

Linda's BROCCOLI CAULIFLOWER SALAD

 
This is one of my favorite salads !
 
1 large head broccoli
1/2 to 1 cup sunflower seeds
1 to 1-1/2 cup cauliflower
6 slices bacon
1 cup raisins
Creamy Salad Dressing

Fry bacon until crisp. Crumble. Wash broccoli and cauliflour. Drain well. Break or cut into bite-sized pieces. Place in bowl along with all other ingredients. Add enough Creamy Salad Dressing so all pieces are moist.

Homemade Apple Butter

 
16 cups of fresh apple sauce
(use 7 large apples cored and peeled, 2 cups of water and boil apples until well done, then push through a sieve) 3 lbs. brown sugar
1 cup of apple cider vinegar
2 tablespoons of powdered cinnamon
1 cup crushed pineapples

Combine all ingredients and bake at 350 for 3 hours. Stir every 20 minutes or so. Pour into jars and seal. Yields 5 quarts. Great on toast!

SOUTHERN-FRIED GREEN TOMATOES


 
4 medium green-pink tomatoes
1 cup flour
1 egg
3/4 cup milk
1/2 tsp. Garlic salt
1/2 tsp. Natures Seasoning
1/2 cup butter or fried chicken drippings

Wash tomatoes, core, and slice 1/4" thick (leave peeling on)
Combine flour,
 garlic salt, and  in bowl Combine milk with egg and beat with fork to mix well
Cover bottom of skillet with 1/4" butter (or drippings from frying chicken) and heat to medium-hot
Dip tomato slices in egg/milk mixture, then in seasoned flour. Repeat process so they will be double-dipped. Then, arrange tomato slices in medium-hot skillet.
Brown on one side and turn, browning the other side. Tomatoes are done when golden brown. Remove from skillet and drain on paper towels.

NOTE:
 This is also a good way to fix fried cucumbers and fried okra.


STEAK FAJITAS

 
 
1 pound lean steak, cut into strips
1/2 cup fresh lime juice
1/2 tablespoon ground black pepper
1 tablespoon chopped fresh cilantro
2 tablespoons vegetable oil
1 large onion, cut into thin strips
1 julienned green bell pepper
2 lemons, quartered
salt and pepper to taste
6 (12 inch) flour tortillas

1.Combine the lime juice, ground pepper and cilantro in a shallow dish. Place steak strips into the marinade and refrigerate for two to four hours.
2.Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add steak strips, and fry until cooked to your liking. Remove meat and set aside.
3.Add remaining oil and onions to the skillet. Cook over medium low heat, until translucent, stir in green peppers and steak. Squeeze the juice of 1 lemon over the top and stir. When the green bell peppers are just tender remove the pan from the heat. Season with salt and pepper to taste. Serve the steak fajitas with tortillas and lemon wedges on the side. Makes 4 servings


IHOP BUTTERMILK PANCAKES

 
1 1/4 C. Flour
1 1/2 tsp. Baking Powder
2 1/2 tsp. Sugar
1/2 tsp. Salt
1/2 tsp. Baking Soda
1/8 C. Vegetable Oil
1 Egg ( slightly beaten )
1 1/2 C. Buttermilk ( 1/8 - 1/4 C more if needed to keep batter thinner)

Preparation:

Place first five ingredients into a bowl, add buttermilk, oil and egg. With a spoon mix all ingredients and beat until smooth.
Heat a frying pan or a griddle. Fry pancake on medium low heat. To a hot pan or griddle pour a little oil or spray with a none stick vegetable oil.
Pour batter to a desired size. Let batter start to show small bubbles on top before you turn pancake over to finish cooking.
Turning pancakes is made much easier if you spray your pancake turner with a none stick spray. The turner does not stick to the uncooked dough of pancake when you are turning them. If batter seams to be to thick add a little more buttermilk and mix well. Makes about nine 4" - 5" pancakes. Serve warm with your favorite syrup.

Cinnamon Rock Candy

 
 
 
1 cup water

3-3/4 cups sugar

1-1/4 cups light corn syrup

1 tsp. each red liquid food coloring, cinnamon oil

1/3 cup confectioners' sugar

 
        Line a cookie sheet with foil; butter foil and set aside.  In a large heavy saucepan, combine water, sugar, corn syrup and food coloring.  Bring to a boil over medium heat, stirring occasionally.  Cover and cook 3 minutes to dissolve sugar crystals.  Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300ºF (hard-crack stage), about 25 minutes.  Remove from heat; stir in cinnamon oil (keep face away from mixture; odor is very strong).  Immediately pour onto prepared pan.  Cool completely, about 45 minutes.  Break candy into pieces using edge of a metal mallet.  Sprinkle both sides with confectioners' sugar.  Store in airtight container(s).

Classic Macaroni Salad

 
The next best thing to potato salad !!!
 
2 cups cooked macaroni, drained, rinsed, cooled

2 hard-cooked eggs, chopped

1/4 cup each chopped celery. chopped onion

1/3 - 1/2 cup mayonnaise or salad dressing

2 tsp.sugar
 
2 tsp. vinegar

1/2 tsp. salt, or to taste

 
1/2 tsp. prepared mustard

pepper to taste

 
       Combine all ingredients, using about 1/3 cup mayonnaise and stir well.  Add a little mayonnaise, if necessary.  Taste and adjust seasonings.  Cover and chill several hours before serving.  Makes 4 sevings.

CUPCAKE CONES

I use to make these when my kids ( now 42 and 32 ) were in Primary School... All the kids love them.. Just decorate for whatever the occassion!!!!
 
1 pkg.  Cake Mix (any flavor)
24-36 ice cream cones(flat-bottom kind)
 frosting(any flavor)

1. Heat oven to 350 degrees.
2. Make cake batter as directed.
3. Fill each cone about half full.
4. Stand cones in muffin pan.
5. Bake 20-25 minutes. Cool. Frost.
Makes 24-36 cones.

CROCKPOT CHICKEN AND RICE

 
This is great to put together the night before and refridgerate, next morning put in crockpot , plug it in , set iy to low and when you get in from work, supper is ready!!!


2 lbs boneless skinless chicken, cut into 1" cubes
2-6oz pkg seasoned wild rice mix
2 1/2 cups water
1 can condensed cream of chddar soup
1/2 cup melted butter
2 medium chopped onions
1 cup broccoli florets
1/2 lb Velveeta cheese, cut into cubes

Combine all ingredients in crockpot, mix well. Cover and cook on Low for 6-10 hours.

EASY BLACKBERRY COBBLER

 
 
1- 16 ounce pkg of frozen blackberries

3/4 cup sugar

1 tbs cornstarch

1/8 tsp salt

1/4 cup all purpose flour

1/4 tsp cinnamon

1 frozen pie crust, thawed

Mix well and pour into a unbaked crust..
 
Place in oven for 30 minutes at 425 degrees or 45 minutes at 375 degrees. Top with ice cream and serve with coffee.

PEACH COBBLER

I made this at The Olde Store... Was always a hit with the customers :)


1 stick butter
1 cup sugar
1 cup milk
1 cup self-rising flour
2 cans peaches, quartered
 
Melt butter in a 2 qt. casserole. Mix together flour,sugar and milk,pour over the melted butter. Do not stir. Pour peaches all over the top. Bake at 375 to 400 degrees for about 40 minsm or till golden .

CREAMY EGG SALAD SANDWICH

 
One of my friends gave me this recipe, OMG it is good :)
 
1/2 cup PHILADELPHIA FLAVORS Chive & Onion Cream Cheese
2 Tbsp. KRAFT Mayo Light Mayonnaise
2 CLAUSSEN Whole Kosher Dill Pickles , chopped

6 hard-cooked eggs , chopped

4 sandwich rolls

Mix cream cheese, mayo and pickles in medium bowl. ADD eggs; mix lightly. FILL each roll with 1/2 cup egg filling.

Holiday Breakfast

 
 
7 slices bread, cut-up
6 eggs
4 oz. shredded cheese
3 c. milk
1/2 t. salt
1/4 t. pepper
1 T. dry mustard
6 slices bacon

Crumble bread and cheese mixture in a greased 8x10 baking dish. Beat remaining ingredients and pour over bread mixture. Arrange bacon on top. Store in fridge overnight. Cook next morning at 350* for 50 to 55 minutes. Serves 6 - 8

ROAST LEG OF LAMB ( DAD’S BEST YET) Thanks Bob

 

1.      Preheat oven to 450 degrees

 

    2.  Rub down Lamb with alittle oil, season with

          black peper, alittle Cajun seasoning, paprika and

          garlic power.

 

 3.  With a sharp knife cut some slits in the Lamb

  Insert sliced garlic cloves.

 

      4.  Place alittle water in bottom of roasting pan.

      

      5.  Roast for 30 minutes

 

 6. Reduce heat to 350 degrees

 

 7. Cook for about 30 minutes / pound or until

           Internal temperature reaches 170 degrees

 

       8.  Let stand for 10 to 15 minutes covered.

 

 

Roast Potatoes +

 

 

Add potatoes and onions about 1 ½ hours before taking lamb out. Season with black peper, alittle Cajun seasoning and paprika. Stir after 45 minutes as to get potatoes browned all over.

I know I've sent this before but it's Scott's favorite holiday treat.
 
 
Fruit Salad
 
1 can peach pie filling
I can chunk pineapple in it's own juice
1 large bag frozen strawberries
3-4 bananas sliced
Throw it all in a big bowl, stir, put in the fridge and let it sit while you finish cooking.
Can be served alone or over angel food cake, pound cake, or ice cream. 
As with all recipes this is the base, but feel free to take it and run with it.  Add coconut, cherries, marshmallows, nuts, oranges...anything you like goes!  Just make sure you add the pineapple or the banana will turn brown.  You can also put the banana in a little lemon juice if pineapple is a no no for you.
 
Super simple and super good!!!

NEW YORK CITY SOFT STREET PRETZEL

These are so good !
 
1C hot water
1 package active dry-yeast
1-1/2C flour
2T soft butter
1/2t salt
1T sugar
1-1/4C (additional) flour
Coarse kosher salt

Combine hot water and yeast in a mixing bowl. When dissolved, add flour, butter, salt and sugar and beat for 3 minutes. Stir in Additional 1-1/4C of flour and knead until dough loses its stickiness. Place in a greased bowl and cover, allowing to rise until dough has doubled in size. Punch dough down and divide into 12 equal pieces. With the palms of your hands, roll each piece into 18-inch ropes. Twist and loop into desired shape. Place on greased baking sheet and let rise until doubled. Preheat oven to 475-degrees.

Ready a solution of 4 cups water and 5T baking soda. Mix together in glass or plastic bowl. (Do not use aluminum). Dip pretzels into mixture and return them to greased sheet. Sprinkle with coarse salt and bake until browned, about 12 minutes. Makes 1 dozen large pretzels.

PORK AND BEANS

Wonderful pot of beans, I have made these for years!
 
Four cans Campbell's Pork and Beans
One cup light brown sugar
One fourth cup vinegar
One whole chopped onion
Three tablespoons mustard
Two tablespoons melted butter

Mix well and put in a large flat baking dish or a big iron skillet. Cover the top with bacon strips and bake in a slow oven until the bacon is cooked on top and the sugar begins to caramelize. Do not let the beans dry out, you want them to be slightly juicy. The secret here is the cooking time and it varies with ovens and climate. Try one hour or more at 250 degrees and watch them after the hour is up. I have cooked them at 200 for two hours. If you double the recipe you will have to increase the cooking time.


SOUTHERN STYLE TURKEY WINGS

 
A friend of mine use to make these delicious wings.. yummm!
 
6 slices bacon, cut in 1 inch pieces
10 turkey wings, tips removed
salt and pepper
all purpose flour
1 large onion, chopped
1 glove garlic, minced
1/2 cup all purpose flour
1/2 pound mushrooms, sliced
1 can (28 oz) tomatoes (I use diced italian)
2 cups water
2 chicken bouillon cubes
1/4 cup chopped parsley
3 - 4 drops hot pepper sauce
croutons
parsley

1) Heat oven to 350.
2) Fry bacon until almost crisp in large skillet on medium heat. Remove, Drain on paper towels.
3) Rinse turkey wings. Pat dry. Sprinkle with salt and pepper. Dust with flour. Brown lightly in bacon drippings. Remove. Arrange in large roasting pan.
4) Saute onion and garlic in drippings remaining in skillet. Stir in 1/2 cup flour and brown. Add mushrooms. Cook and stir 2 minutes. Add tomatoes, water and bouillon cubes. Cook 5 minutes. Stir in parsley and hot pepper sauce. Spoon over wings. Cover. Bake at 350 for 2 hours. Remove cover. Sprinkle bacon pieces over top. Return to oven. Bake until bacon is crisp (about 20 minutes) Garnish with croutons and parsley.

OLD-FASHIONED TEA CAKES



1 cup margarine
2 cups sugar
3 eggs
5 cups all purpose flour
2 tablespoons buttermilk
1 teaspoon baking soda
1 teaspoon vanilla

Preheat oven to 400 degrees.
Mix dry ingredients, add all other ingredients and mix well, (I usually use a fork to mix mine) Roll to 1/4 inch thickness, cut with biscuit cutter, or a large glass dipped in flour to prevent sticking. Place on cookie sheet, that has been greased with margarine. Bake on 400*
preheated oven 7to 8 minutes.


TEXAS HASH



3 large onions, diced
1 large green pepper, diced
3 tablespoons fat
2 cups stewed tomatoes
1/2 cup  uncooked rice
or 2 cups uncooked noodles
2 teaspoon chili powder
2 teaspoons salt
1/8 teaspoon pepper

Saute' the onion and pepper in the fat. Add the ground beef and fry until the mixtures falls apart. Stir in the tomatoes, rice or noodles and seasonings. Pour into greased 2 quart baking dish. Cover and bake, removing cover the last 15 minutes. Serve hot. Bake at 350 degrees F for one hour.

CREAM CHEESE MINTS

 
 
 
1 3-oz pkg cream cheese at room temperature

4 drops food coloring (mint - green, lemon - yellow, strawberry - pink)

1 tsp flavoring extract as above

1 T milk

Stir the above together until well mixed then add:

1 lb confectioner's sugar

Mix all the sugar into the cream cheese mixture, kneading it with your hands. When completely mixed, roll into a large sausage. Break off small amounts and roll into balls, about 1" diameter. Place balls on waxed paper, and press flat with fork dipped in confectioner's sugar. Let dry until tops are just dry, then flip and dry out underside. Store in airtight container so they don't dry out any further. Yields 80-90 mints.

ITALIAN CREAM CAKE

Ohhhh So Good !!!

Pre-heat oven to 325 degrees

Mix and let stand:

1 cup buttermilk
1 teaspoon soda

Cream together:

2 cups granulated sugar
1 cup butter or margarine
1/2 cup shortening

Add, beating after each:

5 egg Yolks

Gradually and alternatingly add: (beat after each addition)

2 cups flour
Buttermilk mixture

Stir into mixture:

1 teaspoon vanilla

Beat until stiff peaks (but not dry) and fold into batter mixture:

5 egg Whites

Stir gently into batter:

1 cup chopped nuts (pecans, walnuts, or almonds)
1 small can coconut (3-1/2 ounces)

Bake in 3 greased and floured 9-inch pans for 25 minutes or until done. Let cool.

Frost with Cream Cheese Frosting:

Whip until light:

8 ounces cream cheese
1 stick butter or margarine

Add and continue to whip:

1 teaspoon vanilla
1 pound confectioner's sugar

Beat until right consistency for frosting. Frost cake.


CREAMY PECAN PRALINES

 
 
1 stick margarine or butter
2 cups sugar
Pinch Of salt
1 small can condensed milk
1 tesp. vanilla
2 cups pecan halves

Melt butter; add sugar and stir; add salt and milk. Allow to boil up then turn down heat. Stir constantly. When sugar forms soft ball in cold water, add vanilla and pecans. Turn out on wax paper

Corn Dogs Bites

 

I use regular weiners and cut them into 2" pieces! 

2 lbs.wieners or Little Smokies
2/3 cup yellow cornmeal
1 cup flour
1/2 teaspoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
2 tablespoons Shortening
3/4 cup plus+ 1 tablespoon milk
1 egg, beaten
toothpicks
vegetable oil for frying
mustard or sauce for dipping

Mix together cornmeal, flour, baking powder, sugar and salt. Work in shortening with a pastry blender or fork. Stir in milk Gently stir in egg until mixture is smooth.
Insert a toothpick into the end of each wiener, leaving about one inch of toothpick exposed.
Holding each wiener by the toothpick, dip into the cornmeal batter. With a butter knife, spread the batter over the wiener so it is evenly covered.
Gently drop the wiener into hot oil (360°) in deep fryer and cook until golden. Remove from oil and drain on paper towels. Serve warm with Dijon mustard or a honey mustard blend.
May be prepared, frozen, and stored in freezer bags. Heat frozen wieners for 8-12 minutes at 350° F..
Makes about 48 corn dog snacks.
 

Artichoke Dip

 
It is time to start thinking about the holidays and all the stuff we want to cook/bake to make it a special time !
 
This simple dip gets a little extra flavor from the green chile peppers.You may want to use a little chopped jalapeno for a hotter artichoke dip.

1 can Artichoke hearts in water, not marinated
4 ounces mild green chiles, chopped
1 cup Mayonnaise
1 cup grated Parmesan cheese

Drain artichoke hearts and break apart. Mix all ingredients together. Bake at 350° for 30 minutes.

Serve with tortilla chips or assorted crackers.

Serves 4.

Jalapenño Mexican Corn

OMG this is so good !!!
 
2 eggs, beaten

1 cup sour cream

1/4 cup butter or margarine, melted
 
1/2 onion, chopped

1 can (11 oz.) Mexi-corn, drained

1 can (14 oz.) cream-style corn

3 tbsp.. diced jalapeños

1 box (8-oz.) cornbread mix

 
       Combine all ingredients in a bowl.  Pour into a slow cooker prepared with cooking spray.  Mix well.  Cover.  Cook on Low 4 hours or High for 2 hours.
 
OR
 
Pour in a greased iron skillet or 9X12 pan that has been greased and bake at 400* for about 30 to 45 minutes are till golden brown.

 

EASY BEER BREAD

 
Good Bread :)

3 cups self-rising flour
1/3 cup sugar

1 can of beer

Mix above ingredients together and place in a greased loaf pan.
Bake for 1 hour at 375*.
 
 Cool on a wire rack for 30 minutes before slicing.


SWEET POTATO PIE



1 1/2 lb sweet potatoes

1 cup granulated sugar

12 tbsp unsalted butter or margarine

2 eggs

1 tsp vanilla

1/2 tsp nutmeg

A 9 inch deep-dish pie crust, unbaked

Boil potatoes until tender. Drain and peel.
Put the potatoes, sugar and butter in a blender. Mix, then add eggs, vanilla and nutmeg. Blend ingredients until mixture is smooth. Pour into unbaked pie shell and bake at 375 *  for 45-55 minutes until filling is set.

HUSH PUPPIES

 

3/4 cup self rising yellow corn meal
1/3 cup flour
1/2 teaspoon salt
1/2 cup of butter milk
1 large egg, beaten
1/2 cup chopped onion
2 jalapeno, seeded and chopped fine

Combine all of the ingredients in a bowl. Mix thoughly. Spoon into hot oil, fry till golden brown.


FRIED FROG LEGS



12 frog legs
1 cup of flour
1 cup of bread crumbs
1 egg
Salt and Pepper
1 stick of butter

Wash frog legs thoroughly. Refrigerate for 2 hours (covered). Rinse. Roll in salt and peppered flour. Dip in beaten egg and roll in bread crumbs. Fry in butter until golden brown. Serve at once.

CHOCOLATE CAKE MIX COOKIES

Easiest Cookies Ever :)
 
1 box chocolate cake mix
1/2 cup oil
1 egg
1 cup chocolate chips

Preheat oven to 350. In bowl, combine first 3 ingredients, mix well. Stir in chocolate chips. Drop by spoonfuls onto greased baking sheets. Bake for 8 to 10 minutes.

TEMPURA FRIED VEGETABLES

Choose from the list below:

Broccoli, cut into florets

Cauliflower, cut into florets

Eggplant, sliced 1/4" thick

Green pepper, sliced into rings
Button mushrooms, left whole
Yellow squash, sliced 1/4" thick

Batter:

1 cup ice water

1 Tbs. vegetable oil

1 egg yolk

1 cup sifted flour

1 Tbs. cornstarch

1 tsp. baking powder

1 tsp. salt

Mix all together, keep cool.

Heat oil to 350 degrees (at least 2" deep if using a skillet). Using tongs, dip each piece of vegetable until submerged in batter, quickly shake off excess batter and drop in hot oil. Vegetables are cooked when they float to the surface.

DUMP CAKE

Delicious and so easy!


Spread 1 can cherry pie filling in 9x13 pan.
Spoon 1 can crushed pineapple on top of pie filling.
Sprinkle 1 box yellow cake mix evenly on top of pineapple.

Cover cake mix with 2 sticks of butter, thinly sliced.

Bake at 325 degrees about 30 minutes until brown on top.
Serve warm or cool.

SOUTHERN PEACH COBBLER

 

1-1/4 cups self rising flour
1 cup sugar
1 cup milk
1 large can sliced peaches, drained, reserving liquid
1 tsp vanilla
1/2 cup (1 stick) melted butter or margarine

Preheat oven to 350 degrees. Melt margarine or butter and pour into a 9X13x2 baking dish. Mix flour, sugar, milk, vanilla and 1/4 cup reserved liquid. Pour into baking dish over melted butter. Add sliced peaches, distributing evenly in pan. Bake until top is golden brown, about 45 minutes to one 1 hour.
 
 


RUM CAKE

 
 
Great Cake !!!


1/2 - 3/4 cup pecans -- finely chopped
1 box yellow cake mix
1 small vanilla instant pudding mix
1 teaspoon allspice -- optional
1/2 cup vegetable oil
1/2 cup dark rum
1/2 cup pineapple juice
4 large eggs

GLAZE
 
1 cup sugar
1/2 cup butter -- no substitues
1/4 cup dark rum
1/4 cup pineapple juice
1/8 teaspoon allspice -- optional

Preheat oven to 325. Grease and flour bundt or angel food cake pan. Sprinkle layer of pecans over bottom of cake pan. Set aside. Combine all ingredients, mix at medium to high speed for 2 minutes. Pour over layer of pecans. Bake one hour. Insert kife or toothpick into cake; if it comes out dry, cake is done. Let cool for about 10 minutes, then invert onto plate. Glaze while hot.

GLAZE: Combine all ingredients for glaze in small but tall saucepan and bring to a boil. Reduce heat and continue to gently boil for 2 minutes. (Note: you need the tall saucepan with enough head room to allow boiling to swell up without spilling over edge of pan.) With a skewer, poke holes all over the cake sides, top and the center. Spoon glaze over the cake slowly, allowing cake to soak in the glaze. It is best made the day before so that the cake can get "Tipsy".


SLOW-ROASTED PORK SHOULDER

 
 
1 -  4 to 5 lb Pork Shoulder
Oil or unsalted butter for coating
Salt & freshly ground pepper

PREHEAT OVEN TO 350°F. Oil or butter pork all over. Season fatty outer layer with salt and pepper. Place pork on a roasting rack in a pan. Place pan in center of preheated oven and roast, uncovered. Roast for 30 minutes per pound or until the internal temperature at the thickest point reaches 155°F. Remove from oven. Cover loosely
 with foil and allow to "rest" for about 30 to 45 minutes before slicing.

BISCUIT CHICKEN AND DUMPLINGS

1 family size can of Cream of Chicken Soup or broth
1 can of water
3 cans of cheap biscuits (They do just as well)
1/2 stick of margarine
2 or 3 boiled eggs sliced
flour to roll biscuits as thin as possible
Salt & pepper to taste

Pour the soup in a large 4 - 6 qt. boiler and stir. Add water slowly as you stir to keep soup from lumping. Add margarine and bring to a boil. Place biscuits on flour covered paper one or two at the time and roll out very thin.
Slice and drop into boiling soup. Stir slightly to keep from sticking but not too much or you will tear the dumplings . This same procedure can be done by just pinching off the biscuits into bite size and drop them into the soup.
Add a can of chicken if you desire. Add eggs, stir slightly and salt and pepper to taste.

CREAM OF CHICKEN SOUP

 
Nothing better then making your own soups...
 
1 cup cooked, chopped chicken
3 cups chicken stock
1 cup milk
chopped onion, amount depends on your onion taste buds
2 Tbs margarine
2-3 Tbs flour
salt and pepper to taste

Saute onion in margarine, add flour. Stir until bubbly, add chicken, cook for one minute. Add broth and milk, cook until hot throughout (don't boil) and serve.
 

BUTTERMILK PIE

 
SO SO GOOD!

2-1/4 cups sugar
1/2 cup all purpose flour
2 cups buttermilk
2 eggs
1 stick butter, melted
1 tablespoon lemon extract
2 uncooked pie shells

Mix sugar and flour. Add buttermilk and eggs; beat with electric mixer. Add melted butter and lemon extract, mixing thoroughly. Pour into uncooked pie shells. Bake at 325 degrees for 1 hour or longer until

COCONUT CAKE

 
Another Awesome Cake!
 

 
1 Yellow Cake Mix
2 packages frozen coconut
2 pints sour cream
2 cups sugar

Prepare icing first:  The night before, place sour cream, coconut (still frozen), and sugar in crock pot on low.  Do not stir ! !  Let cook until fairly clear and bubbly.  This will take several hours.
Prepare cake mix according to package directions.  Bake in  8 or 9 inch round pans. When cake is cool, use serrated knife to split layers into  two so that you have 4 layers.  Spoon icing (coconut glaze) between layers and around sides and on top of cake.  It will be runny.   Let cake chill for a couple of hours and you will have the moistest, richest, coconut cake that you have ever had.


SUPER EASY POUND CAKE


 
2 cups self rising flour
2 cups sugar
2 sticks margarine
5 large eggs
1 tsp. Vanilla extract
1 tsp. almond extract
1 tsp. butter flavoring
8 oz sour cream

 
Preheat oven to 350° degrees.  Sift flour & sugar together.  Add remaining ingredients Mix well.  Spray Bundt pan with Pam spray.  Pour into bundt pan.  Bake 45 to 50 minutes or until toothpick inserted in middle comes out clean.

LASAGNA

I got this from a friend a couple years ago .. Good Stuff!

10 oz. UNCOOKED lasagna noodles
1 lb. shredded mozzarella

Sauce:
1 lb. lean ground chuck
1/2 tsp. minced garlic
1 tsp. oregano
Salt
24 oz. tomato sauce
18 oz. tomato paste

Filling:
3 cups cottage or ricotta cheese
1/2 cup Parmesan cheese
2 Tbs. parsley flakes
2 beaten eggs
Salt & pepper to taste

Brown meat & drain; add remaining sauce ingredients and simmer.
Mix together filling ingredients in a separate bowl.
Spread a small amount of sauce to cover the bottom of a deep 9x13-inch baking dish. Layer 1/2 UNCOOKED noodles, 1/2 filling, 1/2 mozzarella, and 1/2 meat sauce; repeat. Pour 1/2 to 1 cup of water on top; cover with foil and bake at 350 degrees F for one hour, uncovering the last 10 minutes. Let sit 10 minutes.

Southwestern Steak & Peppers ( With Diabetic Exchanges )

I grabbed this off a list I am on, I have several Diabetic Muffins  on my list..
 
 
1/2 tsp. each ground cumin, ground coriander, chili powder

1/4 tsp. salt, or to taste

3/4 tsp. coarsely ground pepper, + more to taste

1 lb. boneless top sirloin steak, trimmed of fat

3 cloves garlic, peeled; 1 halved, 2 minced

3 tsp. canola oil or extra-virgin olive oil, divided

2 red bell peppers, thinly sliced

1 medium white onion, halved lengthwise, thinly sliced
1 tsp. brown sugar

1/2 cup brewed coffee or prepared instant coffee

1/4 cup balsamic vinegar
4 cups watercress sprigs

 
Mix cumin, coriander, chili powder, salt and 3/4 tsp. pepper in a
small bowl. Rub steak with cut garlic. Rub spice mix all over
 
 steak. Heat 2

tsp. oil in a large heavy skillet, preferably cast iron, over
 
 medium-high

heat. Add steak and cook to desired doneness, 4 - 6 minutes
 
per side for

medium-rare. Transfer to a cutting board and let rest. Add
 
remaining 1 tsp.

oil to skillet. Add bell peppers and onion; cook, stirring often,
 
 until

softened, about 4 minutes. Add minced garlic and brown sugar;
 
 cook, stirring
often, 1 minute. Add coffee, vinegar and any accumulated
 
meat juices; cook 3

minutes to intensify flavor. Season with pepper. To serve:
 
Mound 1 cup

watercress on each plate. Top with sautèed peppers and
 
 onion. Slice steak
thinly, across grain and arrange on vegetables. Pour sauce
 
from pan over

steak. Serve immediately. Makes 4 servings.

Red Velvet Whoopie Pies

 
OMG if you have never had a Whoopie Pie, then your in for a treat :)
 
Cookies:

1 box devil's food cake mix

3/4 cup water

1/2 cup vegetable oil

3 eggs

2 tbsp. red food color

1 box (4-serving) chocolate instant pudding and pie filling mix

Filling:

1 cup butter or margarine, softened

2 cups marshmallow creme

1-1/2 cups confectioners' sugar

1 tsp. vanilla

Topping:

1/2 cup each fresh blueberries, fresh raspberries
       Heat oven to 350°F.  Line cookie sheets with parchment paper or lightly spray with cooking spray.  In a large bowl, beat cookie ingredients with electric mixer on low speed until moistened.  Beat 1 minute longer on high speed. Drop batter by 1/4 cupfuls 2" apart onto parchment-lined cookie sheets.  Bake 12 - 15 minutes, until set; do not overbake.  Cool 2 minutes; remove from cookie sheets to cooling racks.  Cool completely, about 15 minutes.  Filling:  In large bowl, beat ingredients with electric mixer on high speed until light and fluffy.  For each cookie pie, spread about 1/4 cup filling on bottom of 1 cooled cookie.  Top with blueberries, raspberries and second cookie, bottom-side down.  If you'd like smaller cookie pies, prepare using 2 tbsp. batter; bake 8 - 10 minutes or until set.  Topping:  Mix ingredients and top just prior to serving.

Not the ordinary Fruitcake

 
I am not crazy about traditional fruitcakes, but I love this one..
 
:
2 cups each water, raisins
1 cup unsweetened applesauce
2 eggs
2 tbsp. sugar or liquid sweetener
3/4 cup cooking oil
1 tsp. baking soda
2 cups flour
1-1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
1 cup pecans
       Heat oven to 350ºF .  Cook raisins in water until tender and water is gone.  Add applesauce, eggs, sweetener and oil.  Mix well.  Blend in soda, flour, cinnamon and nutmeg, sifted together.  Add vanilla.  Pour into greased loaf pan.  Bake about 1 hour.  

Five-Minute Chocolate Mug Cake

 
You want something chocolate and your alone so you don't want to make a whole cake.. Make this one serving , mouth watering mug of delight.. mmmmm Just Right!
 
4 tbsp. sugar
 
4 tbsp. all-purpose flour

2 tbsp. cocoa

1 egg

3 tbsp.  milk
 
3 tbsp.  oil
 
3 tbsp.  chocolate chips,

 small splash vanilla 
 

 
       Add dry ingredients to a mug and mix well.  Add egg and
 
mix thoroughly.   Pour in milk and oil and mix well.  Add
 
chocolate chips,add vanilla and mix again.  Put mug in
 
microwave and cook 3 minutes at 1000w.  Cake will rise over
 
top of mug.  Allow to cool a little.  Makes 1 serving.

Tunnel Of Fudge Cake

This has to be one of my favorite cakes ever.. I made it a lot baxk in the 60's...
 

1 3/4 cups butter or margarine, softened
1 3/4 cups granulated sugar
6 eggs
2 cups powered sugar
2 1/4 cups all purpose flour
3/4 cup cocoa
2 cups chopped walnuts

Ingredients for Glaze:

3/4 cup powered sugar
1/4 cup cocoa
1 1/2 to 2 tablespoons milk

Heat oven to 350° . Grease and flour 12 cup Bundt Pan. In large bowl beat margarine and granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually add powdered sugar, blend well. By hand, stir in remaining cake ingredients until well blended. Spoon batter into prepared pan; spread evenly. Bake at 350°  for 58-62 minutes.

Cool upright in pan on cooling rack 1 hour, invert onto serving plate. Cool completely.

In small bowl, combine glaze ingredients until well blended. Spoon over top of cake, allowing some to run down sides.

Store tightly covered.

Makes 16 servings.

Notes:

Nuts are essential for the success of the recipe.

Since this cake has a soft tunnel of fudge, ordinary doneness test cannot be used. Accurate oven temperature
and baking time are critical.

OldTime Jam Cake

 

I remember my Grandma making this cake, My mom made it a few times too. Delicious !!!

 

1 cup butter, at room temperature
2 cups sugar
1 teaspoon vanilla
5 eggs, at room temperature
1 cup buttermilk, at room temperature
2 teaspoons baking soda
4 cups flour
1/2 teaspoon salt
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 cup raisins
1 cup nuts
2 cups blackberry jam

Preheat oven to 350 degrees. Grease and flour four 8-inch or 9-inch cake pans, or line them with parchment paper. Commbine buttermilk and baking soda; set aside. Sift together flour, salt, and spices; set aside.

Cream butter, sugar, and vanilla until light and fluffy. Add the eggs one at a time, beating well and scraping the bowl after each addition. To the butter mixture, add half the flour mixture and mix until combined. Add half the buttermilk mixture and mix until combined. Add the rest of the flour mixture and mix; then add the rest of the buttermilk and mix. Scrape the bowl and mix well.

Add raisins, nuts, and jam; mix well. Pour into prepared pans. Bake 25 to 30 minutes, until a tester inserted in the center comes out clean. Place pans on wire racks to cool.

Taco Soup

 
 
1 lb. hamburger
1/4 tsp. black pepper
2 T. Taco seasoning
1 tsp. salt
1 qt. tomato juice
1/2 c. milk
1/4 tsp. garlic salt

Directions

Brown hamburger and drain; add pepper, taco seasoning and salt.
Start heating tomato juice; add milk, garlic, salt and hamburger.
Simmer for 5 to 10 minutes. Eat with corn or tortilla chips, shredded cheese, and a dip of sour cream
.


Hearty Potato Soup

 
 
6 potatoes, sliced
2 carrots, diced
6 celery stalks, diced
2 qt. water
1 onion, chopped
6 T. butter
6 T. all purpose flour
1 t. salt
1/2 t. pepper
1 1/2 c. milk

In 2 qt. water, cook together potatoes, carrots and celery for 20 minutes.  In skillet fry onion in butter until soft. Stir in flour, pepper and salt and add milk until it thickens; add to veggies.

Oven Fried Chicken

 
 
2 frying chickens (3 1/2 - 4 lbs.)
1 t. celery seeds
1 t. paprika
1 T. salt
2 large eggs
2 drops Tabasco
1 stick butter, melted
1/2 c. flour
2 T. onion powder
2 T. lemon pepper
2 T. fresh chopped thyme
3/4 c. buttermilk
16 oz. seasoned bread stuffing mix, crushed

Prepare the chickens. Mix together flour, celery seeds, onion powder, paprika, lemon pepper, salt and thyme. Wisk eggs and buttermilk together thoroughly.  Add Tabasco. Pour into a shallow bowl. Pour the crushed stuffing mix unto a separate shallow bowl. Pour the melted butter onto a baking sheet. Dredge the chicken pieces in the seasoned flour, then in the buttermilk mixture. Coat pieces in crushed stuffing mix. Gently roll the chicken in the melted butter on the baking sheet. Divide the chicken between 2 baking sheets. Place the breasts and wings on one, and the legs and thighs on the other. Bake at 400 for 30-35 minutes for the white meat and 35-40 for the dark meat.


Barbequed Meatballs

 
 
3 lb. hamburger
2 c. oatmeal
1 c. milk
1 c. chopped onion
2 eggs
½ tsp. garlic powder
2 tsp. salt
½ tsp. pepper
2 tsp. chili powder

Sauce:
2 c. ketchup
2 tsp. liquid smoke
¾ c. brown sugar
½ tsp. garlic powder

Directions

Mix and shape in balls and put into baking
pan in a single layer. Top with sauce. Bake
at 350 for 1 hour.

Note: These can also be canned. Bake at ¾
hour, put into cans and cold pack for 2 hours
.

2 hour buns

 
 
1 ½ pkg. yeast
1 c. warm water
¼ c. sugar
1 egg
Beast these ingredients together in a 4 quart bowl, until foamy. Add 2 tablespoons shortening, ½ teaspoons salt and 3 ½ cups bread flour. Mix and knead just enough to blend well. Let rise until double in bulk. Make the buns and place in cake pans. Let rise again and bake at 400 degrees for 15-20 minutes.

Hillbilly Bread

Rustic and oh so good !!
 
4 c. warm water
3 tbsp. yeast
1 1/4 c. warm water
1 c. oil
2 tsp. honey
4 1/4 c. whole wheat flour
6 tsp. salt
1 c. brown sugar
10 1/2 c. white flour

Directions

Mix together 4 c. water, brown sugar, yeast, whole wheat flour and salt.
Let stand 1 hour; then add the rest of ingredients mixing only until flour is mixed in.
Grease bowl and dough. Cover for 40 minutes.
Knead dough and let rise for an hour. Put in pans and let rise until they double in size.
Bake at 350 for 30 minutes.
